Egg, arugula, and charred asparagus salad. You don’t have to be a vegetarian to enjoy this tasty salad recipe from CookingLight! You’ll need a boiled egg; some asparagus spears; baby arugula; extra-virgin olive oil; kosher salt and black pepper; whole-milk Greek yogurt; lemon juice; and water. Cut the egg into quarters and sprinkle it with salt and pepper. Next, add a pinch of salt and pepper to the olive oil. Spread the asparagus on a baking sheet, and drizzle the olive oil mixture over it. Broil until it’s lightly charred. For the dressing, combine a tablespoon of water, three tablespoons of yogurt, a teaspoon of lemon juice, and salt and pepper to taste. Put the arugula in a bowl, add the dressing, and toss. Then top with the asparagus and egg. Tip: For a little bit of extra crunch, add a tablespoon of pine nuts.

You’ll also need cream cheese; chopped, fresh dill; peeled and grated cucumber; some cucumber slices; a portion of thinly sliced roast beef; and salt and ground black pepper to taste. Wrap a few teaspoons of the grated cucumber in a paper towel and gently squeeze to release the liquid. Then mix it in a bowl with the cream cheese, dill, salt, and pepper. Slice the roll, and spread the cream cheese mixture on one side; then place the roast beef, cucumber slices, and the other side on top. Your sandwich is ready to enjoy!
Avocado tomato wrap. This super-healthy wrap from Taste of Home takes only 10 minutes to make, so it’s not only tasty, but also very convenient. You’ll need a thinly sliced avocado and a tortilla (use your favorite flavor). You’ll also need a leaf of lettuce, half a tomato, some shredded Parmesan cheese, garlic powder (optional), and a pinch of salt and pepper. Using a fork, mash an eighth of the avocado and spread it over the tortilla. In layers, add the lettuce, tomato, and half of the remaining avocado. Sprinkle the garlic powder, salt, pepper, and Parmesan cheese on top; then roll up the wrap tightly. Not a vegetarian? You can easily spruce up this lunch with some sliced deli turkey.
